Cow ghee (clarified butter) is found in almost every Indian kitchen. It is one of the most important constituents of vegetarian and satvik diet. Healthier than vegetable oils
Cow ghee contains saturated fats while vegetable oils contain polyunsaturated fats. So, Cow ghee has higher smoke point than vegetable oil. The smoke point is the temperature at which the oil is decomposed and where possibly toxicological relevant compounds are formed. Because of high smoke point, cow ghee does not break down into free radicals as many other oils. The very stable saturated bonds in cow ghee do not disintegrate during heating, and that is why Ghee with its short chain of fatty acids is less likely to break down in to dangerous free radicals while cooking.
Cow Ghee improves blood HDL level, which is good for heart. Bile is an important mode of transport for the excretion of cholesterol and its metabolites. Research has shown that there is significant increase in the excretion of total bile acids, uronic acid, and phospholipids on consumption of Ghee. So, Ghee exhibited hypocholesterolemic effects by enhancing the secretion of biliary constituents. Cow Ghee helps in improving digestion by stimulating the secretion of stomach acid. While other oils and butter move which are tougher to metabolize, cow ghee is easily digestible. It also contains butyric acid which body produces in intestine and it helps in food digestion.
